Tax Rates
Set one everyday rate as the default, then add exceptions only when you need them.
Create a Tax Rate
Choose Add Tax Rate, give it a familiar name such as "Standard VAT", and enter the percentage as you would say it: 20 for 20%. Mark it as the default so new items use it automatically.

Default
New items get the starred rate. Select another rate's star to change it.
Per-item override
Pick a different rate when editing an item, for example for reduced-rate or exempt products.
Turn off instead of deleting
An inactive rate stays on past sales but can no longer be chosen for items. The default rate cannot be deleted; make another rate the default first.
